A Japanese-style buffet restaurant in NY is seeking an experienced Head Sushi Chef to lead its sushi program. The ideal candidate will prepare sushi, sashimi, and omakase offerings, manage quality control, train junior staff, and help create seasonal specials. Strong knife skills, organization, and leadership are essential in this fast-paced, hands-on kitchen.

Key Responsibilities

  • Prepare and serve sushi, sashimi, and omakase dishes
  • Oversee quality control and ingredient freshness
  • Maintain cleanliness and ensure DOH food safety compliance
  • Manage ordering and inventory of sushi ingredients
  • Support and train other sushi chefs
  • Collaborate on seasonal and special menus

Qualifications

  • 7–10 years of experience in dine-in sushi restaurants
  • Strong omakase skills and knife technique
  • Valid food handler certificate (or willingness to obtain one)
  • Ability to lead a team and maintain high kitchen standards
  • Professional, dependable, and team-oriented

Salary
$70,000–$90,000 per year (commensurate with experience)

Work Schedule
8–10 hours/day, including weekends and evenings (final schedule to be confirmed at interview)
